Tofu and Shrimp Báhn Mi
Ingredients
Tofu Marinade
- 1 block extra firm tofu
- 2 shallots, peeled
- 1 ½ inch knob of ginger
- 3 cloves garlic
- 1 tbsp soy sauce
- 2 tbsp fish sauce
- 4 tbsp vegetable oil, divided in half
- 1/2 tsp red pepper flakes
- 2 tsp sugar
- 2 scallions, chopped
- 2 sprigs cilantro
- 2 teaspoons lime zest
- 1 tbsp oyster sauce
Shrimp
- 6 oz shrimp, cleaned and deveined
- Salt + pepper to taste
- Chili powder to taste
- 1 tsp olive oil
Pickled Veggies
- 1 large carrot, peeled and cut into thin strips
- 1 medium daikon radish, peeled, cut into thin strips
- 1 tbsp kosher salt
- 1/4 cup sugar
- 1/2 cup rice wine vinegar
- 1 cup water
Sandwich
- French baguette, toasted
- Mayonnaise (optional)
- Sriracha (optional)
- Lime juice
- Cilantro
- Cucumber, sliced
- Pickled veggies
Instructions
- Begin by placing your firm tofu between several paper towels and placing a plate on top to remove excess water
- Slice tofu into thin planks and let dry once more in between paper towel while you make your pickled vegetables.
- Toss thinly sliced carrot and radish in salt and sugar and rub until dissolved. Then add your vinegar and water and place in container in fridge.
- In a blender or food processor, add shallot, ginger, garlic, soy sauce, fish sauce, 2 tbsp oil, pepper flakes, sugar, green onion, cilantro and lime zest. Process until smooth, then add in oyster sauce to taste. Add sauce to bowl covering tofu slices completely and let marinate covered in the fridge for at least 1 hour, and up to 24.
- Season shrimp with salt, pepper, chili powder and oil.
- Grease your favorite grill using remaining vegetable oil and get it hot, then sear your shrimp for 1 min on each side and remove.
- Sear tofu to create nice grill marks and remove once done. About 2 min on each side.
- To assemble the sandwiches, toast your bread to get it nice and crispy. Then mix mayonnaise with sriracha and lime juice for the bread (optional).
- Layer your mayo mixture, cilantro, cucumber, tofu and shrimp and garnish with pickled veggies and more lime juice!
