Soy-Fed Chicken Tinga Quesadilla

Ingredients

  • 8 oz soy-fed chicken tinga
  • 6 oz Oaxaca cheese, shredded
  • 2 6-inch flour tortillas
  • 2 oz salsa verde

Instructions

1. In a mixing bowl, combine the shredded chicken tinga and oaxaca cheese until well mixed. (Chicken needs to be cooked to 165o F.)

2. Heat a non-stick skillet over medium heat.

3. Place one flour tortilla in the skillet and spread 4 oz of the chicken/cheese mixture evenly over the tortilla.

4. Top the cheese mixture with the other tortilla.

5. Cook the quesadilla until the bottom tortilla is golden brown and crispy.

6. Carefully flip the quesadilla and cook the other side until it is also golden brown and crispy, and the cheese is melted.

7. Once cooked, remove the quesadilla from the pan and place it on a cutting board.

8. Cut the quesadilla into 8 triangles.

9. Serve the quesadilla triangles with salsa verde drizzled on top.
