Summery Soybean Succotash


  • 2 cups shelled edamame
  • 1 cup corn kernels
  • 2 bell peppers, any color, diced
  • 1/2 red onion
  • 1/3 cup crumbled feta
  • 2 tbsp fresh dill sprigs (or 1/2 tsp dried)
  • 1/8 tsp each, garlic powder, salt, and pepper, or, to taste
  • 2 tbsp vegetable oil


  1. Heat oil in a medium skillet over medium heat.
  2. Add corn, red onion, and dry seasonings and sauté for 4-5 minutes, or until corn is golden and onion is translucent.
  3. Add peppers and sauté another 1-2 minutes, or until peppers are slightly tender yet firm.
  4. Add edamame and stir until well mixed.
  5. Remove from heat.
  6. Stir in feta cheese and garnish with dill.
