Summery Soybean Succotash
Ingredients
- 2 cups shelled edamame
- 1 cup corn kernels
- 2 bell peppers, any color, diced
- 1/2 red onion
- 1/3 cup crumbled feta
- 2 tbsp fresh dill sprigs (or 1/2 tsp dried)
- 1/8 tsp each, garlic powder, salt, and pepper, or, to taste
- 2 tbsp vegetable oil
Instructions
- Heat oil in a medium skillet over medium heat.
- Add corn, red onion, and dry seasonings and sauté for 4-5 minutes, or until corn is golden and onion is translucent.
- Add peppers and sauté another 1-2 minutes, or until peppers are slightly tender yet firm.
- Add edamame and stir until well mixed.
- Remove from heat.
- Stir in feta cheese and garnish with dill.
