Spicy Peanut Noodles
Ingredients
- 1 block of firm tofu, drained and pressed
- 1 tbsp of oil for cooking
- 1 tbsp of soy sauce
- 1 tbsp of dark soy sauce
- 1 tsp of garlic powder
- 1 tbsp of sesame oil
- 1 tsp of white pepper
- 100 grams of dry bean thread or rice noodles
- 1 cup of shredded carrots
- 1/2 cup of thinly sliced green onions
- 1/4 cup of chopped peanuts
For peanut sauce:
- 1/2 cup creamy peanut butter
- 1 tbsp of sriracha sauce
- 2 cloves of garlic
- 1 tsp ginger powder
- 1 tsp maple syrup or agave
- Juice from one lime
- Handful of mint and cilantro for garnish.
- 1/4 of water
Instructions
- Sliced the tofu in 1 1/2 inch cubes and combine with soy sauce, dark soy sauce, garlic powder, sesame oil, and white pepper.
- In a medium size sauté pan, heat the oil over a medium high heat and fry the tofu until it’s golden brown and crispy on the outside. Set aside.
- Emerge the bean thread noodles and the boiling water for 10 min until they are soft. Drain and transfer to a large salad bowl.
- Slice the green onions thinly and add them to the bowl.
- Shred the carrots and add them to the bowl.
- Make the peanut sauce by combining the peanut sauce ingredients.
- Add the fried tofu to the salad bowl and pour the sauce all over the salad. Combine by gently tossing the sauce. Sprinkle with some crushed peanuts, mint leaves and cilantro.
