Green Goddess Dressing
Ingredients
- 1 block silken tofu
- ⅓ cup each of parsley, cilantro, mint and basil
- 2 stalks of scallions
- 1 ½ lemons, juiced
- 3 tbsp olive oil
- 1 tsp honey (optional)
- Pinch of salt & pepper to taste
Instructions
- Add all of the ingredients to a blender and blend until smooth. Adjust the salt as needed
- Keep refrigerated for up to 5 days and serve with veggies, protein or as a salad dressing
