Green Goddess Dressing

Ingredients

  • 1 block silken tofu
  • ⅓ cup each of parsley, cilantro, mint and basil
  • 2 stalks of scallions
  • 1 ½ lemons, juiced
  • 3 tbsp olive oil
  • 1 tsp honey (optional)
  • Pinch of salt & pepper to taste

Instructions

  1. Add all of the ingredients to a blender and blend until smooth. Adjust the salt as needed
  2. Keep refrigerated for up to 5 days and serve with veggies, protein or as a salad dressing
