Vegan Brownies

Ingredients

  • 9 oz powdered sugar
  • 3 oz dark chocolate (around 72%)
  • 2 1/4 oz all-purpose flour
  • 2 1/4 oz Dutch process cocoa powder, finely chopped
  • 1 3/4 oz cocoa butter, finely chopped
  • 1 1/8 oz soy milk powder
  • 1/2 oz dry malt extract
  • 1 1/2 tsp salt
  • 3/4 tsp instant espresso powder
  • 3/4 tsp baking powder
  • 5 oz boiling water
  • 1/4 oz vanilla extract

Instructions

1. Preheat the oven to 350°F (175°C).

2. In a food processor, combine all ingredients except water and vanilla. Grind until the chocolate disappears and the mixture becomes fine and dry. This may take up to 2 minutes. Ensure the mix is finely ground with no visible chunks of chocolate.

3. Spray an 8-inch baking pan with non-stick spray and line it with parchment paper.

4. In a separate bowl, combine the dry mix with boiling water and vanilla extract. Whisk until smooth. The batter will be thin.

5. Pour the batter into the prepared pan.

6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow the brownies to cool before serving. Enjoy!
