Soy-Fed Brisket Mac & Cheese Bites

Ingredients

  • 8 oz cavatappi casta, cooked until al dente
  • 8 oz soy-fed brisket, BBQ style, shredded (brisket must be cooked to 145o F and rested for 3 minutes.)
  • 12 oz yellow easy melt cheese, cut into small pieces
  • 6 oz canned green chiles, diced (1/2 of a 12 oz can)
  • 3/4 quart soy milk
  • 3 eggs
  • 1/2 cup water
  • 2 cups all-purpose flour
  • 1 quart panko breadcrumbs

Instructions

1. In a large saucepan, heat the soy milk gently over medium heat. Add the easy melt cheese and cover. Reduce the heat to low and allow the cheese to melt, stirring occasionally.

2. Once the cheese is melted, add the cooked pasta, diced green chiles, and shredded brisket to the saucepan. Stir until well combined.

3. Line a baking sheet pan with parchment paper. Pour the pasta mixture onto the pan until it forms a slab that is about 3/4 inch thick.

4. Place another piece of parchment paper on top of the pasta slab and use something slightly heavy to weigh it down. This will help to compress and set the mixture.

5. Chill the weighted pasta slab in the refrigerator until completely cool and set.

6. Once chilled, remove the top tray and parchment paper. Use a dough knife to cut the slab into small, roughly 1-inch shapes (such as triangles).

7. In a bowl, whisk together the eggs and water until completely combined.

8. Set up a breading station with three vessels: one with all-purpose flour, one with the egg mixture, and one with panko breadcrumbs.

9. Take a cut pasta bite, dip it into the flour, coating it completely and shaking off any excess flour.

10. Dip the floured bite into the egg mixture, allowing any excess to drip off, and then coat it in the panko breadcrumbs.

11. Place the coated bite on a clean tray and repeat the process with the remaining pasta bites.

12. Heat oil in a fryer or deep skillet to 350°F (175°C).

13. Fry the coated pasta bites in batches until they are golden brown and crispy.

14. Remove the bites from the oil and drain them on paper towels.

15. Serve the brisket mac and cheese bites hot, topped with hot sauce if desired.
