Pumpkin Spice Tofu Pudding
- 2 cups of pumpkin puree
- 16 oz. silken tofu, cubed
- 1/3 cup pure maple syrup
- 2 teaspoons pumpkin pie sauce
- 2 tbsp natural almond butter
- 1/3 cup unsweetened soymilk
- Optional for serving: whipped cream, cinnamon
*Place all ingredients in a food processor and process until smooth, about 60 seconds.
*Serve pudding out of jars and top with whipped cream and cinnamon, if using.
