Pumpkin Spice Tofu Pudding


  • 2 cups of pumpkin puree
  • 16 oz. silken tofu, cubed
  • 1/3 cup pure maple syrup
  • 2 teaspoons pumpkin pie sauce
  • 2 tbsp natural almond butter
  • 1/3 cup unsweetened soymilk
  • Optional for serving: whipped cream, cinnamon


*Place all ingredients in a food processor and process until smooth, about 60 seconds.

*Serve pudding out of jars and top with whipped cream and cinnamon, if using.
