Passion Chia Soy Pudding

Ingredients

  • 1 cup chia seeds
  • 3 cups soy milk
  • 1/2 cup coconut yogurt
  • 4 passion fruit
  • 1/4 cup maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 cup granola

Instructions

1. In a bowl, combine chia seeds, soy milk, maple syrup, and vanilla extract. Whisk until well combined, ensuring there are no clumps of chia seeds.

2. Chill the mixture in the refrigerator for at least 1 hour or until the chia seeds have soaked up the milk and the mixture has thickened.

3. Divide the chia pudding between 4 jars or glasses.

4. Top each serving with a dollop of coconut yogurt.

5. Cut the passion fruits in half, scoop out the flesh, and distribute it evenly among the jars or glasses.

6. Sprinkle granola over the top of each serving.

7. Serve chilled and enjoy your refreshing passion fruit chia pudding!
