Soybean Cowboy Caviar
Ingredients
Base
- 3 roma tomatoes, diced
- 1 medium avocado, diced
- 1/2 cup diced red onion
- 1 (15-ounce) can black soybeans, drained and rinsed
- 1 cup shelled edamame
- 1 cup cooked corn
- 1 medium orange bell pepper, diced
- 1/3 cup cilantro, minced
Dressing
- 1/3 cup soybean oil
- 1/2 lime, juiced
- 2 tbsp red wine vinegar
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp garlic powder
Instructions
- Place base ingredients in a large mixing bowl and toss to combine.
- In a small mixing bowl, whisk together dressing ingredients until combined. Pour dressing over the base mixture and toss to coat.
- Serve with pita chips. Store leftovers covered in the fridge for 3-5 days.
